Wild Rice Soup

Ingredients
  

  • 2 Tbsps. Onion minced
  • 1 Tbsp. Garlic Powder
  • 1 can 8oz Mushrooms
  • 2 Cups Chicken broth
  • 1 cup Wild rice or Wild Rice Mix
  • 62 oz. Cannellini Beans 4 cans of 15.5 oz
  • Salt to taste
  • Parsley to taste

Instructions
 

  • Take a large pot and pour Chicken broth (set 1 cup aside)
  • Heat the broth on medium heat and add onion and garlic.
  • Rinse 1 cup of wild rice and drain them.
  • Now add the wild rice, thyme, and salt to hot chicken broth.
  • Place the lid on the pot and set the timer (30 minutes).
  • Now make the cream for your soup.
  • Add beans, and the remaining chicken broth into a blender
  • Blend on high speed for 1 minute until smooth and have a creamy texture.
  • After 30 minutes, when your timer goes off, add the creamy mixture and mushrooms to the hot broth.
  • Set the timer again for 15 minutes and place the lid on the pot.
  • The wild rice should be a little chewy when the timer goes off.
